Jamaican Blue Mountain Coffee and Coconut Cake Recipe

Servings: 8-10 | Prep Time: 25 minutes | Cook Time: 40 minutes

Ingredients

For the Cake:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

¾ cup unsalted butter (softened)

1 ¾ cups sugar

4 large eggs

1 cup coconut milk

1 tsp vanilla extract

1 ½ cups shredded sweetened coconut

For the Coffee Syrup (Optional):

½ cup Jamaican Blue Mountain coffee (brewed, strong)

⅓ cup sugar

For the Frosting:

1 ½ cups heavy cream

¼ cup powdered sugar

1 tsp vanilla extract

½ cup shredded toasted coconut (for topping)

Instructions

Step 1: Prepare the Cake Batter

Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.

In a bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream the butter and sugar until light and fluffy.

Add the eggs, one at a time, mixing well after each addition.

Mix in the vanilla extract.

Gradually add the dry ingredients, alternating with the coconut milk, starting and ending with the dry mixture.

Stir in the shredded coconut until evenly distributed.

Step 2: Bake the Cake

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 3: Make the Coffee Syrup (Optional)

In a small saucepan, combine the brewed Blue Mountain coffee and sugar.

Heat over medium heat, stirring, until the sugar dissolves.

Let the syrup cool. Brush it over the cake layers for a coffee-infused flavor.

Step 4: Prepare the Frosting

Whip the heavy cream, powdered sugar, and vanilla until soft peaks form.

Spread the whipped cream between the cake layers and over the top and sides.

Step 5: Assemble and Garnish

Sprinkle toasted coconut over the top of the cake for a decorative touch.

Slice, serve, and enjoy with a fresh cup of Jamaican Blue Mountain coffee.

This Jamaican Blue Mountain Coffee and Coconut Cake is a tropical indulgence that’s perfect for any coffee lover. The light coconut flavors and the optional coffee syrup make it a treat to remember. Enjoy each bite with a sip of coffee for the ultimate experience!
